Hi Mountain's 13-1/2" square screen allows air to flow freely, and grease to drip away from the meat. Small 1/4" mesh supports the meat and keeps it from falling through, especially when working with ground meat. Please note that a common pitfall in jerky making is to use a cookie sheet instead of a jerky screen to cook the jerky. Cookie sheets can cause the jerky to fry instead of cooking correctly.
